My dad's apple pie

Ingredients:

For the filling, we'll need
  • 4 or 5 apples
  • 50 gr of butter
  • Juice from one lemon
  • 2 spoons of brown sugar
  • A generous splash of rum (or whatever alcohol you have in hand)
  • Cinnamon to your heart's content!!
For the dough, we'll need
  • 500 gr of flour
  • 150 gr of sunflower oil
  • 150 gr of milk
  • A lightly beaten egg
  • 8 gr of salt
  • Some white sugar and apricot jam

Instructions:

Step 1: Cut the apples in thin slices, but not so thin that they fall apart when cooked. Then toss them in a pot over medium-high heat along with the butter, lemon juice, brown sugar and rum and let them soften.
Once soft, add the cinnamon and stir the mix before letting it soften another few minutes. Remove the pot from the heat and set aside.

Step 2: In a bowl, make a mound of flour with a hole in the center. In the hole, pour the oil, milk, egg, and salt, and knead with your hands until you have a smooth dough. Cover the bowl with a cloth and let the dough rise for 15 minutes.

Step 3: Divide the dough into two portions, one slightly smaller (this will be used to cover the pie). Roll out each portion into a circle. Place the larger portion in a pie dish, making sure a bit of dough hangs over the edges, and pour in the filling before covering it with the remaining portion of dough.
Use the excess dough that overhangs the edges to seal the top, I use a fork to press both of the edges together. Make four small slits in the top of the pie.

Step 4: Bake the pie in the oven at 180°C (350°F). When the pie has firmed up slightly but is still white, open the oven and brush a generous amount of jam over it with a silicone brush before sprinkling white sugar on top. This will give the top a crispy finish. Close the oven and let it bake until golden brown.
